Fresh, sweet corn is one of the staples of summer. Growing up, one of the only ways I remember eating it was simple corn on the cob, slathered with butter. There’s absolutely nothing wrong with that, and I could down a couple of cobs all by myself. But let’s face it: it’s almost impossible to eat corn on the cob gracefully. I love that there are so many recipes out there using corn, both on and off the cob. Up until about 2 years ago, when I made a recipe using just the kernels I would buy canned corn.
