If you’ve followed my blog for any length of time, you know I love bell peppers. They’re delicious, good for you, and add color, texture and flavor to so many dishes. I know that some people completely cook down their peppers, but I prefer them tender-crisp, so I still get that bite and crunch. For a long time, I only cooked with green bell peppers. But once I began experimenting with red and yellow, I never looked back. I always have all 3 colors in my fridge, and each spring I buy and grow my own peppers.
