Asian Salmon and Noodles

Ingredients

  • NOODLE & VEGETABLE INGREDIENTS
  • 4 ounces Fettucini
  • 1 Tablespoon butter
  • 1/2 cup yellow onions, sliced
  • 4 cloves thin-sliced raw garlic
  • 4 ounces baby portobello mushrooms, quartered or sliced
  • 1 cup snow peas, sliced in half diagonally
  • 10 spears asparagus, hard ends removed, sliced at an angle
  • 2 Tablespoons raw honey
  • 2 Tablespoons low sodium soy sauce
  • 1 teaspoon Sriracha sauce
  • 1/4 cup vegetable broth (I use homemade)
  • SALMON INGREDIENTS
  • 6 ounce salmon steaks
  • Salt & pepper
  • 1 Tablespoon Avocado oil or Canola oil
  • 1 Tablespoon raw honey
  • 1 Tablespoon low sodium soy sauce

GARNISH

  • 1/2 teaspoon sesame seeds
  • green onions, white ends removed, diced

Instructions

  • Preheat broiler. My broiler does not give me a "ready" indicator, so I find that if I preheat it at the start, it will be hot and ready to go when I am
  • NOODLES & VEGETABLES
  • Cook fettucini according to box directions, in pot of boiling, salted water
  • In a small bowl, combine soy sauce, honey, Sriracha, and broth. Stir well to combine, and set aside
  • Heat butter in medium skillet. Add onions and cook, over medium-low heat, until soft and light golden brown. Add thin-sliced garlic, and cook for 2 minutes, until golden and fragrant
  • Turn heat to medium. Add asparagus and saute for about 7 minutes. Add snow peas and mushrooms, and cook for another 5 minutes
  • Pour sauce mixture into skillet, and cook for 1 minute. Drain fettucini, and add to vegetable mixture for one minute, so noodles soak up sauce
  • SALMON
  • Season salmon generously with salt & pepper
  • Heat large, oven-safe skillet on medium-high heat. Add oil to skillet, and when it's sizzling, add salmon to the skillet
  • Sear salmon for 90 seconds. When salmon releases easily from the skillet, turn over salmon and sear for another 90 seconds
  • Mix honey & soy sauce together. Brush top of salmon with mixture
  • Place salmon under broiler for 2 minutes. If desired, brush more sauce on salmon halfway through. Using an oven mitt, carefully remove skillet from oven
  • Portion pasta and vegetables into bowls. Top with salmon, sesame seeds and green onions
