Even meat lovers won’t be able to resist my Recipe Roundup: Meatless Monday. This collection of vegetarian and vegan recipes includes appetizers, main dishes and sides so full of flavors you won’t miss the meat.

My parents both became vegetarians in the mid 90’s. A few times over the years, my mom has suggested that I try it for a couple of weeks. Let’s be honest…that’s not going to happen. I’ve pledged on occasion to do Meatless Monday. I’ll go meatless for lunch, and then forget and have meat for dinner. 

While I won’t ever fully give up meat, that doesn’t mean I don’t love a wide variety of meatless meals. Sometimes it’s just what I need to re-set after an indulgent holiday or vacation, or I’m just craving something without meat. So I’m sharing some of my favorites with you with this Recipe Roundup: Meatless Monday
