A superfood takes center stage for this week’s Recipe Roundup: Kale. Whether raw or cooked, kale can be used in so many different types of recipes.
I was a very picky eater as a child, particularly with vegetables. There are a few I wouldn’t touch with a 10-foot pole, including brussel sprouts, okra, and lima beans. Kale, on the other hand, has always been on the love side. My mom made it quite often, very simply with just onions, garlic, and seasonings. Once I started cooking I prepared kale the same way, until about 2 years ago when I started finding kale recipes on Pinterest. There are so many ways to prepare and eat kale, whether raw or cooked. I have to admit, I haven’t joined the raw kale movement yet, but I’m definitely willing to try it. This week’s Recipe Roundup: Kale celebrates this delicious leafy green vegetable.
