There’s not much better than a plate of crispy on the outside, fluffy on the inside fries. This week’s Recipe Roundup: Fries celebrates all the goodness.
I am a self-professed french fry snob. When I order fries, I expect them to be screaming hot, crispy on the outside and fluffy on the inside. I’m not at all ashamed to send the fries back when they aren’t up to par, and have done so many times. When I go to McDonald’s, if I see a batch of fries in the oil, I’ll ask to wait for the fresh ones. Some people like the little crispy ends, but I much prefer the larger pieces, so that I get that distinct contrast between crispy exterior and soft middle. I’ll eat steak fries, but my favorites are the regular cut and thin cut. I’ve only recently become a fan of sweet potato fries, and will often order them at restaurants. The funny thing is, as much as I love fries, I very rarely ever make them at home. I’ll occasionally buy the fries in the frozen food section, but even then it’s pretty rare.
