I have to admit, I never cooked much with wine until recently, other than risotto. I don’t know why not, because wine lends such a wonderful depth of flavor to dishes. I know some people are afraid to cook with wine because of the alcohol; but the beauty is, the alcohol cooks out and you are just left with flavor. You don’t want to go with the cheapest wine, and you also don’t have to go super expensive. As the chefs say: cook with wine that you would drink. One of my favorite's to make with red wine is beef stroganoff. It adds such a nice depth of flavor. Your clams and mussels in white wine sauce sounds delicious!
