Dark meat is where it’s at. Yes, I know that’s not grammatically correct, but in this instance I’m going with it…because it’s true. For as long as I can remember, I have always been a dark-meat lover. Probably because that’s what my parents always cooked. Yes, chicken breast has less fat and is likely a little healthier. But it also gets dry much more quickly during the cooking process. I would rather risk a few more calories for juicier, more tender meat. I have a few friends who refuse to eat bone-in chicken. The bone is where the flavor is! Also, bone-in chicken can cook longer, and the bone helps the meat retain more moisture. It’s just a fact. You are so welcome! Your chicken thighs look amazing and I can't wait to try the recipe. I think the only thing missing from my pantry is the Korean chili paste, but that's easy to fix.
