Jelly Bean Rice Krispies Treats is a fun take on this classic snack! SweeTarts uJelly Beans add a delicious tart bite to these treats, and it’s a great way to use up your leftover Easter candy
When I was a kid, my parents cooked dinner all the time. I remember them rotating the cooking duties from night to night, and we also ate a lot of leftovers. Because of that, I never learned to cook until I was an adult. Sure, I could make eggs and spaghetti, but that’s about it. Back then I loved it, because they did the work. Looking back, I do wish I had spent more time in the kitchen, but oh well. I did always enjoy baking. I remember as a kid helping my mom when she baked, and early on I learned to make chocolate chip cookies and Snickerdoodles. Once I became an adult I learned to make my mom’s rum cake. I still make that cake to this day.
I like sweets and candy, which is exactly why I don’t keep them in the house! Not good for my waistline. I recently partnered with Nestle for an Easter campaign, and of course ended up with way more candy than I needed, even once Easter baskets were filled. Some of the bags were open, just tempting me. I wanted a fun way to use up some of that candy, so I created Jelly Bean Rice Krispies Treats
How fun are these Jelly Bean Rice Krispies Treats?! I use SweeTarts Jelly Beans, which combine the tart bite of Sweet Tarts and the chewy bite of jelly beans. Let me assure you, they are extremely addictive. I’m glad I used them up, so I wouldn’t keep picking at them mindlessly.
When I was a kid I loved eating Rice Krispies for breakfast, and I used to make Rice Krispies treats occasionally, but I honestly can’t tell you the last time I did either one.
Jelly Bean Rice Krispies Treats are super simple to make, and the only change from the traditional is the jelly beans. Rice Krispies Treats come together in under 15 minutes, and include only 3 ingredients: Rice Krispies, Marshmallows (regular or mini), and butter. It’s a sticky, gooey mess, but a delicious sticky, gooey mess. And they’re a wonderful treat.
I tried mixing the jelly beans into the Rice Krispies mixture, but that didn’t work so well with the stickiness of the mixture. So I layered half the Rice Krispies mixture in the greased pan; sprinkled jelly beans evenly over the layer; layered the rest of the mixture; and finished with more jelly beans on top. Because of the jelly bean coating, they like to try and escape. So I press the jelly beans into the layers to help keep them there
The other key to the perfect Jelly Bean Rice Krispies Treats is to let them set long enough before cutting. I made them recently for a party, and wanted to take pictures before I left. I cut them about 10 minutes after they were done, and of course the mixture was still too warm, so they didn’t hold together well. But that didn’t stop me from taking them to the party! And by the time we ate them a couple of hours later, they were perfect. Oh, and they were 100% kid approved by Charlie, Bonnie and Chase.
Jelly Bean Rice Krispies Treats are perfect for Easter, and for using up that extra candy. But why stop there? Make these Jelly Bean Rice Krispies Treats for other holidays, for kid parties, or just because. Have fun with the jelly beans, or use other types of candies. Make them your own. Just be sure to make a large batch, because they will go fast.
